Higashi Brewery Workshop: The Working Heart Between the Stores

The Higashi Brewery Workshop (東酒造場作業場, Higashi Shuzōjō Sagyōba) is a group of sake-making work spaces built in 1949 at the Higashi sake brewery in Noda-machi, Komatsu City, Ishikawa Prefecture, and it was listed as a Registered Tangible Cultural Property on January 8, 2009.

It is not a single tidy block. The registration covers a 2-storey gabled room for the yeast starter, with a rest room, set between the East and Middle Storehouses, together with a boiler area and other work spaces running along the north faces of those two storehouses. The structure is wooden, mostly single-storey with a 2-storey part, roofed partly in tile and partly in sheet iron, and it covers 178 square meters. A chimney is included in the listing.

The yeast starter, or shubo, is the small culture of yeast that sets the main mash fermenting. Placing its room between two storehouses puts the Workshop at the crossroads of daily brewing.

Why the Workshop Was Registered

The Higashi Brewery Workshop was registered under the criterion for buildings that contribute to the historic landscape of the country.

The Agency for Cultural Affairs draws attention to the way its two faces differ. The north side, facing into the compound, mixes clapboard siding on Shinkabe walls with projecting lattice windows, a brick chimney and roofs that overlap at several levels.

The south face of the yeast-starter room, which fronts the road, is faced in stone to match the storehouses on either side and keep the streetscape even. Loose and practical inside, composed toward the street: that dual approach is what earned the listing.

What to Look For at the Higashi Brewery Workshop

The brick chimney is the landmark. The brewery tells first-time visitors to look for it, and its red vertical line stands out clearly against the grey stone.

Walk round to the north side to see the wooden clapboards, the lattice windows and the tangle of tile and metal roofs. The overlapping roofs show a workplace that grew and was joined together as the work required.

The Workshop also runs into the south half of the Main Gate to form one continuous space. With the work area opening directly off the entrance, the plan reflects how a family brewery actually moved through its day.

Seeing the Higashi Brewery Workshop

The chimney of the Higashi Brewery Workshop can be seen from outside the property, and the stone south face of the yeast-starter room is visible from the southern road. The wooden north side faces into the compound, so you will need the brewery's guidance to see it.
