What the Kayashima Sake Brewery Well House is

The Kayashima Sake Brewery Well House (萱島酒造井戸屋形, Kayashima Shuzō Ido-yakata) is a small early Showa-period shelter built over the brewing well at Kayashima Sake Brewery in Tsunai, Kunisaki City, Oita Prefecture, and was registered as a Registered Tangible Cultural Property on January 16, 1998. It is a single-storey timber structure with a tiled roof and a building area of just 12 m².

An ido-yakata is a roofed cover that keeps rain and debris out of a well. The national database classes the Kayashima Well House not as a building but as an "other structure," the category used for walls, chimneys and gates. It stands on the west side of the brewing storehouse, over the well that supplies clean water for the brewery.

A dressed-stone well under a gabled roof

The official description notes that the well itself is lined with cut stone. The shelter above it is a plain structure with a Kirizuma-zukuri gabled roof, and it is noticeably wide for its height. That low, broad profile covers the well mouth generously and leaves the space beneath it light and easy to work in.

Water enters sake at almost every stage. Even the brewery's own short outline of its process lists rice washing, steaming, the yeast starter made from steamed rice, water and koji, and the three-stage mash. The Kayashima Sake Brewery Well House marks where all of that begins, and its place right beside the brewing storehouse makes practical sense.

The sacred rope at the entrance

The south gable end of the Well House is left open as its entrance. The official description goes out of its way to mention that a shimenawa, a sacred straw rope, hangs across this opening and that the structure is carefully looked after day to day.

A shimenawa marks the boundary of a pure or sacred space, and breweries across Japan often treat their wells that way. As architecture, the Kayashima Well House is a 12 m² shelter. The rope across its door says what the brewery thinks it is protecting.

The Well House was registered for contributing to the historic landscape of the country: among the big storehouses, it is the building that marks the brewery's water source.

Seeing the Kayashima Sake Brewery Well House

The Kayashima Sake Brewery Well House stands at the back of the working brewery, west of the brewing storehouse, and there is no public route to it. The well is still maintained as brewing equipment, so for hygiene reasons alone it is not a place to wander up to uninvited. Ask at SAKE GALLERY Tohzai or call the brewery (+81-978-72-1181) if you would like to see it.

Given the chance, stand square to the open south end. The stone rim of the well shows beyond the rope, and it is obvious the whole shelter exists for this one well. Photograph from outside the rope, and only after checking with the staff.
