The Motoba at Kunibanzai Shuzo: A Document Storehouse Reborn as Akita's Yeast Cradle
Not every building at a brewery was built for brewing. The Motoba at Kunibanzai Shuzo began life as a bunko-gura, a fireproof storehouse for documents and valuables, and later took on a new job as the room where shubo, the yeast starter, is cultivated. It stands behind the Main House, on its north side, and it is the only two-storey storehouse among the brewery's registered buildings.
Dating from 1908, the forty-first year of the Meiji era, it is a compact dozo of about 74 square metres, seven ken by three, gabled and entered from the gable end, with a steel-plate roof. The yeast starter is the small, concentrated culture in which yeast is multiplied before it is added to the main mash, so the room that houses it does not need to be large. A former strongroom, thick-walled and secure, suited the task well when the brewery repurposed it.
Why It Carries a National Registration
The Motoba is a Registered Tangible Cultural Property, number 05-0124, one of seven brewery structures entered on the national register together on 10 November 2005. Registration, introduced in 1996 for buildings around fifty years old or more that shape their setting, is a lighter form of protection than the designation reserved for Important Cultural Properties and National Treasures.
It was listed under the criterion for structures that serve as a model of design, and its front entrance is the reason. The doorway keeps the decorative treatment seen across the brewery's older storehouses: the surround is raised into a gateway form and finished with an eyebrow-shaped moulding, the work of a skilled plasterer. That the same care went into a repurposed document store, not just the fermentation storehouses, shows how consistently the family dressed the whole complex to face the street.
What to Look for on a Visit
The Motoba rewards two kinds of attention. First, its shape: as the only two-storey storehouse on the site, it reads differently from the long single-storey fermentation shells around it, a reminder of its original life as a strongroom. Second, its door, where the raised gateway surround and eyebrow moulding echo the South Fermentation Storehouse and reappear later on the North Fermentation Storehouse, tying the buildings into one visual family.
Behind that decorated door, yeast is still nurtured for the brewery's sake. Akita Shuzo, the successor to Kunibanzai, keeps a shop and offers reserved tours from its Suirakuten outlet nearby, where the results can be tasted. Seeing a former document store turned yeast room is a small lesson in how a long-lived brewery adapts its buildings rather than replacing them.
