What the Yamamo Miso and Soy Sauce Brewery Vinegar Storehouse Is

The Yamamo Miso and Soy Sauce Brewery Vinegar Storehouse (ヤマモ味噌醤油醸造元酢蔵, Su-gura) is a single-storey Dozo-zukuri brewing storehouse built between 1926 and 1945, in the early Showa era, in the northwest corner of a miso and soy sauce brewery in Iwasaki, Yuzawa City, Akita Prefecture, and became Registered Tangible Cultural Property on 3 December 2024. Standing just west of the brewing storehouse, it was used to make vinegar. It covers 72 square metres, has a sheet-metal roof and was altered in the middle Showa years.

So the miso and soy sauce brewery made vinegar too. Vinegar comes from fermenting alcohol with acetic acid bacteria, a short step from the koji and yeast work done next door. The range of what the brewery produced is visible in the number and kinds of storehouses on its site.

The Yamamo Miso and Soy Sauce Brewery Vinegar Storehouse is both the smallest and the latest of the storehouses in the brewing area, added in early Showa after the Meiji brewing storehouse and the Taisho moromi storehouse and workshop.

Why It Was Listed

It was listed for its contribution to the historic landscape. The Agency for Cultural Affairs describes it as a storehouse typical of snow country, its eaves reinforced with metal fittings against the weight of snow.

The building is gabled, in Kirizuma-zukuri form, with mortar-rendered walls. There are two doorways, one in the west gable and one on the north side opening onto the passage towards the moromi storehouse: an entrance from outside and a working door into the brewing area.

Inside is a single earth-floored room, Doma. Above the ceiling, straw fibre and similar material was spread as insulation. Fermentation depends on temperature, and the roof space was packed to keep outside heat and cold from reaching it.

What to Look For

On the outside of the Yamamo Miso and Soy Sauce Brewery Vinegar Storehouse, look at the eaves. The roof edges are strengthened with metal to stop them snapping or sagging under snow. Yuzawa gets heavy snowfall, and snow on a roof puts the greatest strain on the eaves; the repair to that weak point is part of why the building was listed.

It is worth comparing the west and north sides. The Agency for Cultural Affairs database has a photograph taking in both, and another of the roof frame. Place the two doorways and you can see how the storehouse fitted into the brewing area.

The insulated roof space cannot be seen from outside. In 72 square metres, the building holds a compact answer to the two conditions of brewing in snow country: weight of snow and swings of temperature.

Visiting

No public opening of the Yamamo Miso and Soy Sauce Brewery Vinegar Storehouse has been announced, and it is not on the factory tour route published on the brewery's official site (checked 25 September 2026).

It stands in the northwest corner of the site and cannot be seen from the old Ushu Kaido. When the tour visits the brewing storehouse, this is the building just to the west; whether you can see its exterior along the way is worth asking when you book.
