What the Yamamo Miso and Soy Sauce Brewery Workshop Is

The Yamamo Miso and Soy Sauce Brewery Workshop (ヤマモ味噌醤油醸造元作業場, Sagyoba) is a single-storey timber brewing workshop built between 1919 and 1926, in the late Taisho era, at the centre of a miso and soy sauce brewery in Iwasaki, Yuzawa City, Akita Prefecture, and became Registered Tangible Cultural Property on 3 December 2024. It links the brewing storehouse, the moromi storehouse, the vinegar storehouse and the rest of the site. At 345 square metres it is the largest of the eight listed buildings. The roof is sheet metal.

This is where soy sauce is heated, filtered and bottled. Heating (hi-ire) stops fermentation and settles colour and aroma; filtering removes cloudiness; filling puts the sauce into bottles and containers. Soy sauce matured in the moromi storehouse passes through this building on its way to becoming a product.

The Yamamo Miso and Soy Sauce Brewery Workshop is the only production building among the eight that is not a plastered storehouse. If the storehouses are for letting things rest, the workshop is for people and machines on the move, and it has the space and light for that.

Why It Was Listed

It was listed for its contribution to the historic landscape. The Agency for Cultural Affairs singles out its role as the hub that ties the brewery together, and the raised roof lantern, the koshi-yane, added for daylight, which gives the building its memorable profile.

The plan is L-shaped under a Kirizuma-zukuri gabled roof. The walls mix three claddings: horizontal weatherboards, Shitami-itabari, vertical boards and sheet metal. Three finishes on one building speak of a working factory that chose its materials to suit each part.

Inside, an earth floor, Doma, spans 7 and a half ken, carried on a king post truss. This Western frame of a central post and diagonal braces suits covering a wide space without columns, and shows a late Taisho miso and soy sauce brewery bringing Western structure into its working floor.

What to Look For

From outside, look up at the roof lantern, a smaller raised roof running along the ridge that draws in light and air through its sides. It is the feature that most defines the Yamamo Miso and Soy Sauce Brewery Workshop and it sends daylight down into the middle of the building.

Inside, notice how the space is used. Akita's fermentation tourism guide says pressing, heating, blending, filtering and filling all take place in one large room rather than in separate compartments, and that the equipment was never fixed: it has been rearranged over the years to reach its present layout. The wide, open floor under the king post truss is what has left room for that reshuffling.

Visiting

The brewery's factory tour includes the factory floor, which appears to be the Yamamo Miso and Soy Sauce Brewery Workshop (checked on the official site, 25 September 2026). Tours last about an hour and must be booked by the day before. As this is a working plant, visitors are asked not to eat natto on the morning of the tour.

The building stands at the centre of the site and cannot be seen from the old Ushu Kaido. Photography is generally allowed on the tour, though some spots are off limits. Follow the guide's instructions when equipment is running.
