What Is the Yokoya Sake Brewery Brewers' Kitchen?
The Yokoya Sake Brewery Brewers' Kitchen (横屋酒造蔵人炊事場, Yokoya Shuzō Kurōdo Suijiba) is a small single-storey timber kitchen from the end of the Taisho period in Senmaya, Ichinoseki City, Iwate Prefecture, registered as a Registered Tangible Cultural Property in 2003.
It sits in the northern corner where the Brewing Storehouse meets the Rice-Steaming House. With a building area of 42 square metres it is the smallest of the nine Yokoya buildings on the register, made up of a lean-to extending from the Brewing Storehouse and a gabled section beyond it.
Why It Was Registered
Kurabito were the brewery hands who worked under the toji, the master brewer. Because sake is brewed in the cold months, the crew traditionally moved into the brewery for the winter and worked around the clock. Iwate is known as the home of the Nanbu toji guild, and breweries across the prefecture needed places to feed and rest these workers.
This was theirs: the kurabito cooked and took their breaks here. The Agency for Cultural Affairs notes that, simple as it is, it served as living space for the people who made the sake and was an indispensable part of the brewery. That a building like this survives, alongside the storehouses and workshops, is what makes the Yokoya complex so complete. Its registration number is 03-0050.
What to Look For
Notice where it is. The Yokoya Sake Brewery Brewers' Kitchen hugs the angle between the room where rice was steamed and the hall where it was mashed, so the crew could eat and rest within a few steps of the work. The closeness says a good deal about the brewing day.
The walls are Shinkabe with visible posts, and the roof is sheet metal. Incorporating the lean-to of the Brewing Storehouse suggests it was added as the need arose. Set beside the plastered walls of the kura, the modest post-and-panel kitchen shows how differently the brewers built for sake and for people.
Visiting
The Brewers' Kitchen is inside the brewery cluster, at the north corner of the Brewing Storehouse and Rice-Steaming House. Its exterior can be seen from the grounds free of charge on opening days of the Senmaya Sake no Kura Exchange Facility. The operator's website does not describe regular public access to the brewery interiors, so plan on seeing the outside; if you hope to go in, contact Senmaya Machizukuri Co., Ltd.
