Where the Yeast Starter Was Grown
The Hirata Dairoku Family Residence Sake Starter Storehouse (平田大六家住宅酒母蔵, motogura) is a clay-walled brewing storehouse in Omi, Sekikawa Village, Niigata Prefecture, dated to the early Meiji period or before, and was registered as a Registered Tangible Cultural Property on 14 October 1999. It stands toward the back of the Hirata family's brewing estate, northeast of the main house.
A single-storey Dozo-zukuri building with a tiled roof, it covers 54 square metres on a long, narrow plan of 6.5 by 2 Ken. Its registration number is 15-0036. The dating is loose: the national database enters the period as "early Meiji or before," but its Western-calendar field reads "before 1911," and the two ranges do not agree.
The First Step in Brewing
Shubo, also called moto, is the yeast starter for sake: steamed rice, koji and water in which yeast is multiplied until it is strong enough to drive a full batch. That is why the building is read motogura. While the Hirata family was brewing, the Hirata Dairoku Family Residence Sake Starter Storehouse was where the starter was prepared and nursed.
From here the starter went to the sake brewery directly north of the main house. In the sequence of the estate this building is the starting point, and together with the brewery and the chimney that marks the old rice-steaming shed, it gives the compound its shape as a working brewery.
What to Look For
The outside is what makes the Hirata Dairoku Family Residence Sake Starter Storehouse stand out. Its clay walls were left rough, then wrapped all round in a skin of vertical boards. Rough clay weathers badly, so the boards were there to protect it. The Agency for Cultural Affairs treats this boarded exterior as a distinctive design that sits comfortably in the landscape.
Anyone used to white-plastered storehouses might take it for a barn. Underneath, though, it is a true clay storehouse; the boarding is an overcoat.
Note the proportions as well: 2 ken wide and 6.5 ken long, much narrower than the other buildings on the estate.
Visiting
The starter storehouse is not open to the public, and no opening has been announced (checked 25 September 2026). It stands toward the back of the plot, and how much of its boarded exterior can be seen from outside has not been confirmed. Do not enter the grounds.
