What the Shioya Brewery Miso Storehouse Is

The Shioya Brewery Miso Storehouse (塩屋醸造味噌蔵, Shioya Jōzō Misogura) is a late Edo miso storehouse at 537 Oaza Suzaka, Suzaka City, Nagano Prefecture, lying along the south edge of the Shioya miso and soy sauce brewery, and was listed as Registered Tangible Cultural Property on 15 May 2007. It is a single-storey Dozo-zukuri building with a gabled pantile roof, and at 185 square metres it is the largest storehouse on the site.

It faces north and measures 14 by 4 bays. The outer walls are finished in Shikkui lime plaster, and the interior is divided into 2 chambers, each with its own doorway on the front.

The Agency for Cultural Affairs dates it to the late Edo period, with the western 5 bays added in early Meiji and alterations in 1993. It is still the heart of the brewery, lined with wooden vats of maturing miso.

Why It Was Listed

The Shioya Brewery Miso Storehouse was listed for its contribution to the historic landscape. The Agency for Cultural Affairs notes its size and its place in the townscape.

Its real value is that the building is still a working tool. As the owners explain, the koji mould and yeasts that ferment miso dislike summer heat and sudden swings in temperature. Thick earth walls soften the changes outside while still letting the seasons through. Over the years, a storehouse used for fermentation acquires its own resident microbes, and when they settle on newly made miso they give it the character of this particular building.

The early Meiji extension is worth reading too. Five of the 14 bays were added to the west of the late Edo core, a sign that the brewery simply lengthened the building when output grew.

What to Look For

Step inside and the smell reaches you first. The Shioya Brewery Miso Storehouse is lined with big thirty-koku vats, said to have been handed down since the Edo period. Miso made in early spring matures here for six to ten months.

Shioya also keeps up the traditional miso-dama method. The owners describe it: steamed, mashed soybeans are shaped into cylinders, left in this storehouse for about two weeks to pick up its microbes, then broken up and mixed for fermentation. Lactic fermentation inside the balls gives the resulting tamazukuri miso a gentle sourness. Building, microbes and method working as one is the main thing to see here.

Outside, look at the long plastered wall and the two separate doorways. At 14 bays this is the longest of the ten listed buildings, and from the north side you can see the wall run almost the full width of the lot.

Visiting

The Shioya Brewery Miso Storehouse is the centrepiece of the brewery's free tour of about 30 minutes. You hear how miso is made while standing among the vats. Visitors who book are offered amazake and miso soup, subject to availability (checked 27 September 2026).

For groups of 10 to 15, the owners also run a miso-making session of about 2 hours that includes the storehouse tour and an explanation, priced at 4,400 yen per person and starting after 1:00 p.m. (checked 27 September 2026).
