The Brewers' Work Hall
The Ebiki Workshop (海老喜作業場, Ebiki Sagyōba) is an early Meiji-period (1868–1882) work building on the north side of the Ebiki brewery premises in Toyoma-machi, Tome City, Miyagi Prefecture, registered as a Registered Tangible Cultural Property on 10 May 2018. It is a single-storey timber building with a metal-sheet roof and a building area of 146 square metres, altered between 1955 and 1964, registration number 04-155.
The Ebiki Workshop sits roughly in the middle of the north side of the lot, filling the space between the miso and soy sauce brewing storehouse and the former sake brewery in the north-west corner.
Where the Brewing Was Done
The Ebiki Workshop was registered as a Registered Tangible Cultural Property for its contribution to the historic landscape. The Agency for Cultural Affairs treats it as an annex of the miso and soy sauce brewing storehouse and as essential to understanding the brewing process.
If the storehouses were where the mash was left to mature, the handling that came before, bringing in soybeans and grain, cooking and mixing, needed a large open floor like this one. Because store and workshop survive together, the sequence of work at Ebiki can still be traced in the layout of the buildings.
Two Gables, One Room
The roof of the Ebiki Workshop is framed in the traditional Wagoya way. Instead of one wide roof it has two gabled kirizuma roofs, each with its ridge running east to west, set side by side from north to south. Beneath them the interior is a single undivided room.
Two parallel roofs let a deep floor be covered without an overly tall roof, and from outside the twin gables are the building's most recognisable feature.
Miyagi Prefecture's announcement at the time of registration describes the roof slightly differently, as a gabled roof extended by lean-to eaves. This article follows the Agency for Cultural Affairs description.
Seeing the Ebiki Workshop
The Ebiki Workshop stands deep inside the lot and is hard to see from the street. When visiting the Kura no Shiryokan in the former sake brewery, note it as the building immediately to the east.
We found no published arrangement for visiting the interior, and as a working space it should not be entered. Photography rules are not stated.
